In Power automate; what is Azure open ai Versus Power Platform AI builder? when to use each? and which is better for text recognition from emails? and process managed and umanaged documents? espically that in AI builder we have a prompt that looks similar to Azure Open AI?

Let me state I did purposely take everything and use Copilot to make it clear as I have no time to write this much, but I verified each answer.

This would have been a little easier prior to the Prompt enhancement to AI Builder John, but now it's more refined and the below gives the best comparison.

Let me say this though, overall if you are not looking to code, build and define your NL capabilities then you will use AI Builder for OCR (which was your question) because its really build for that. While it does prompt based stuff now too, it was initially focused on doing structured and unstructured OCR to usable properties.
