It depends a bit on where you receive these Excel files. But generally speaking this sounds a bit more like a Power Query or Power BI related question.
You can easily combine Excel files with Power Query. And if you make sure the team members all upload it to a single location (like a folder on SharePoint), you can easily refresh/reload the new data:
