Are there any templates that use topics, actions, or anything beyond a very simple description?

I'm trying to learn how to effectively use Microsoft Studio. To do that, I feel like I need to see examples of different types of functionality in action. Unfortunately, the documentation rarely provides examples, and is in general too vague and surface-level in its current state to be informative.
 
I was thrilled to discover that Copilot Studio offers various template apps, thinking I could experiment with asking questions and observing the behavior powering responses, such as navigating topics and actions. Unfortunately, every template app I make seems to only contain very short/simple description and one linked website as a knowledge source. I get that might be nice to demonstrate the ease of use of a simple "info finder" agent. However, I really want to see more complex configurations.  Some apps seem like they might be more complex, like the IT service desk app, but I can only use that template if I have an account with ServiceNow, so that's not an option. 
 
Are there any example agents that can demonstrate complex agent behavior and/or common design best practices? Or any way to learn this information that you might recommend?
 
In case anyone else lands on this thread, Lisa Crosbie's Copilot Studio: Complete Tutorial for Beginners is a fantastic place to start, and eclipses anything currently available from Microsoft.
