Currently, there is no specific Dataverse table in Copilot Studio that directly tracks or provides detailed information on billed sessions for Copilot usage.
For Microsoft 365 admins, detailed billing and usage reports are accessible from the Microsoft 365 Admin Center. This includes reports on user activity and license utilization.
In the Power Platform Admin Center, administrators can view analytics for various Power Platform applications, including Power Virtual Agents.
