Azure DevOps Pipeline - Updating Environmental Variables

Hello,
 
I have question about Azure DevOps Pipeline. 
Do you know the way where automatically will change from DEV to PROD sharepoint environment variables or the only way to build something like this is by json File ?

    But what about if in the solution I decide to create new environment variable ? 
    And the next question in JSON file I have only to put the schema name and default value for example 
    schema : env_database,
    default value : Database ?
     
    This will be enough to setup this json value or in sharepoint envrionment variables I have also to provide GUID of the list and sharepoint url ?
