I'm at the bit where I have to export my table to excel, but I have a Mac...is it going to be impossible? Or should I buy an Office Subscription?

That part of the video shows how to export to Excel using the 'Open in Excel Online' option.

Since this runs in the browser, it'll work on a Mac.

The only part of the course you may struggle with is the Power BI module, as the desktop version of Power BI requires Windows.

Note also that these videos are demos, so there's no requirement for you to actually export the Jobs data (or to buy any Office subscriptions)
