How do i make the video for grading and the content of the video

I cannot tell if you are asking how to record, or asking how to BUILD something TO record?

You can use Teams, schedule a meeting with yourself and screen record.

There are free tools like OBS Studio that are amazing and can do screen recordings.

You can you Microsoft Stream / Chimp if you have an M365 / O365 License

As for what you build, my understanding is still, you can build whatever you want (not sure if you are doing Power Apps, or Copilot), but you can build anything as long as its related to what you learned, so show you understand the concepts you were taught.
